Adjustment Problems
#1
Ever since I got my MINI, I've had the problem of hitting my right knee on the steering column. If I put the seat any farther back, it's a stretch to push the clutch in, if I adjust the steering wheel up, it's uncomforable for my arms and shoulders (plus I feel like I'm driving a bus) Any suggestion?
(I have the S seats if that makes any difference)

If you are hitting your knee on the column (rather than hitting your thigh on the wheel) you may just need to learn to bring your knee back to the right as you go for the brake or let off the brake. Like Risu, I am 6’. I have long arms and legs and a relatively short body. My seat is all the way down (I like to try to see under the rear view mirror.) The back is set relatively upright so that I can bend my wrist over the top of the steering wheel. From this position my knee will hit the column if I bring it straight up.
I hope this helps.

Proper Seating Position
Lowering the seat should help.
Here's a tip I learned a long time ago... and because most people sit too far away from the pedals, I will share it here. Sit in the car, and press the clutch all the way in with your right foot. Yes, the other one. If you can't press it all the way, move the seat up. If you can and your leg is bent at the knee, move the seat back until your leg is straight.
Now, it should be about right, and your left leg will not be fully extended when operating the clutch. Adjust the steering wheel so that your arms feel comfortable and your hands fall easily to the ten and two position. Do not recline the seat like some kind of rap star, you should be sitting almost perfectly straight up, and both hands on the wheel please, at all times!
Now, let's motor!
