Softer is farther out from the bend. It is a bigger lever to bend the bar, as you get closer, it is harded to bend.
I would start on the first hole, then after you can feel what that does, move to the middle. That way you can decide what you prefer and why. The softest is still much firmer than the stock one, so you may like it, but trying out and learning what each does makes your choice more informed.

Slimjimtell's, I trusted you with Remus so I guess you kow best. My package from Duffy arrives on Monday, don't even want to drive the R55 anymore with the stock system after hearing how nice yours sounded. Any change in sound as the cans get broke in? Some get louder and some get a deeper tone.

Keep in mind there is not one setting for every setup. If so there would be only one hole. Your tires, inflation, weight of car, back seat removed, big woofer in back, corner weighted, Lowered...) This will change how the car handles and how the bar should be set.
I recently read about a guy who got the race bar, set it to last setting and I was thinking "This guy doesn't even know what the bar is for." It is to correct steering, but when? In a sweeper with power or late braking with lift off the throttle.
Bars are for the egde of performance and if you don't go out and try to get the tires to squeal, you might not notice any difference in settings.
