you cannot install the JCW kit because its just a cooper? That sucks bro, maybe you can buy a turbo with a cool AlTA AccessPORT ECU.
Then buy the usual accessories: Intercooler (helix, Alta, Forge), Exhaust (magnaflow, alta, invidia), and cant forget the Cold air intake (Alta, Demon of speed, forge)

I think the common answer is going to be "don't spend a ton of money trying to make a Non S faster because you could buy an S for less cash and less hassle."
Then you are going to get reccomendations for a Cold Air Intake and a new exhaust. Most people will say you should invest in handling: Install a 19mm or 22mm rear sway bar, and a good set of tires. I haven't modded my Cooper yet but that's the direction I'm going. Sway bar, good tires, and learning to be a better driver. Then a sprint booster for easier rev matching, then a CAI if I'm still not happy with it.

A simple (but potentially costly) option is to put on lighter weight wheels. In an over simplification, by reducing the unsprung weight at each corner of the car, you'll need less power to get moving. Effectively, you get more power without having to mod the engine, but you'll need to find wheels with a significant weight difference to really feel like the car is a lot faster. At least with this option you will actually get better fuel mileage.
