R56 Baby Seat in Cooper Hard Top?

I've wanted a Mini Cooper S for years. After recently finding out that my wife is expecting our first child, we've pretty much decided to move to the suburbs in from NYC for more space, which would also necessitate a second vehicle. Right now we have a Jeep Grand Cherokee which has more than enough room for a child, but it would still make sense to have a second car with enough room for a child seat in a pinch. Does anybody have any experience with a baby seat in the back of a Mini? Surprisingly, my wife isn't concerned about this as long as we have enough room in our primary vehicle. I don't really want a Clubman or Countryman, so it will be a Cooper Hardtop, or something else entirely. Any advice?
The fun part will be getting them in there and buckling them in peroperly until they grow up big enough to climb and buckle in by themselves. Mine go there by around time they were 2 (IIRC), but until then, it would have been a pain to do that with a 2-door car.
