Is it as easy as the youtube videos make it out to be with some tape, shrink wrap, a 9v battery, and carb cleaner? Or is it worth it to take them to go get sonic cleaned professionally?

I run a can of BG 44K thru the tank every 6 months and have never had to do anything else. Give it a try before tearing things apart.
