Low Operating Coolant Temps?

Low Operating Coolant Temps?
I recently had an issue with my wife's R56 (non-S) where the coolant pipe was leaking. So I changed it out and the thermostat housing since it looked like it was starting to separate at the seems. Prior to this work, I used my Foxwell scan tool to look at the temperatures. It was running around 200F in traffic and with speeds less than 30-40mph, when I got on the highway, it was staying below 210-220F. Can't remember the numbers exactly as it was several months ago. I changed the parts, flushed and bleed the system, no issues.
This past week, the check engine light came up and was there for about a week. I scanned it and got the fault code 2F07 (Map Thermostat from the DME). I replaced the original thermostat housing with an OEM version from FCPEURO, not BMW. I erased the code, and drove around checking the engine coolant temps, it showed to be in the range of 156-168F. The highest it got was ~172-174F. This is seems to be extremely low compared to other threads that I have seen. The check engine light hasn't come back on. The AUX fan turns on, and it seems like the thermostat is opening because the upper coolant radiator hose is definitely warm.
Is this something to worry about? Anyone else seen this issue?
