+38 offset is at the edge of the range that will fit stock suspension.
If you drop your suspension you run a strong risk of rubbing in the rear wheel arches unless you pick a tire size slightly smaller than stock like 205/50-16.
205/55-16 will fit your rim and not rub for now but it is larger than stock so using your offset and dropping your MINI will result in some rubbing in the rear only.
So 205/50-16 is the best choice overall. 205/55-16 will give you the best selection of tires to choose from and if you don't drop your car for about 3 years you can run them for now until you decide about suspension upgrades.

Like minihune said, 205/50 is the way to go. I'm currently running this size tire with a +38 wheel and the 1" drop of h-sport springs, and I used to get some rubbing in the rears. This has since stopped, probably because the tires wore down some! So it's pretty tight but I wouldn't sweat it. The offset looks great too.
