I'm looking at getting these in white within the next month or so. Will they work OK with a 215/45/17 tire (like the Bridgestone RE-11) on a JCW. Is it possible to go even wider, to a 225/40/17?

OK with 215/45-17 and stock suspension. If you are lowered then you may have a little less clearance and risk of some rubbing in the rear due to +37 offset which makes the rim and tire stick out a little more.
225/40-17 technically can fit but tire selection is very limited for street tires-
tirerack only shows race Hoosier A6 and R6 tires not for street use.
Nitto has the NT-555 in that size for about $160 each 300 treadwear.

I may end up getting the JCW suspension kit (I'm modding in order: wheels/tires, suspension, power). IIRC, that lowers it by about 1/2" Is that enough to worry about, or should I stay size stock with 205/45 tires?

If you are lowering you will have more clearance if you are using tires that are stock sized and not much larger.
RE-11 comes in 205/45-17 and will fit the 17x7 rim better and is lighter in weight and costs $9 less. It has a lower sidewall vs the 215/45-17 so it will handle a little better in corners.
The reason to have clearance is if you drive over uneven surfaces or carry back seat passengers you don't want to get rubbing as your drive along.
If you have very smooth and flat roads and you drive the speed limit only and carry only one person in the car then a wider and taller tire would work OK up to a point.

Thanks. Then I'll think about staying with the 205/45s. This car is going to do duty during the year as a daily driver, for 3-4 longer road trips, and for a couple DEs. I'm keeping my Challenge wheels with all-seasons for winter months (Nov-Feb).

The wheels pictured above your post are mounted with 215/45/17s.
I can post pics later, but I got the whites with 205/45 RE-11's and they look to fit fine with my cross coilovers. I will check the outside edge later and make sure there is no flare rubbing. I will post pics when I get my car back!

Please do post. I'd love to see how the whites look in the wild.
Here are some pics! Front is going a bit lower tomorrow! They clear my cross coilovers without spacers, and the rears are about a 1/4" from the inner lip of the flare.
