Racing guys love Enkei... Wheels are light and pretty inexpensive so no worries if you damage them.
Offset is the distance the mounting of the wheel is OFFSET from the center of the wheel. If the offset is zero it mounts right in the middle. If it is +35 it is 35mm towards the out board of the center line center line -35 would be 35mm towards the inner. Some people also go by backspacing with is a different measurement.

Yes, the stock bolt pattern is 4 X 100 mm, and the stock centerbore diameter (the hole in the middle) is 56.15 mm.
You can use wheels with a larger centerbore diameter, but it would be a good idea to use adapter rings to make up the difference. Wheels with a smaller centerbore (like early Miata wheels) won't work unless you have a machine shop enlarge the centerbore.
