Anyone running 215/40/17's?

I think you can mount 225mm tires on 7.5" wide wheels. I would say you could go with 8" wide wheels and 235mm if the offset is right, but I haven't heard of anyone going that wide. Alex would know what is recommended and what is the max possible.
What you have to remember is: The wider the heavier and therefore less responsive. Wider tires may also may also hydroplain easier.
Also, 7.5" wide is the max width in SCCA street prep and street touring.
