Do RSR's only come in 38mm offset? That kinda limits the tires
we can use especially if i might lower the car later.

38 is it, but its just a dremeling away from fitting 215's! and lowering helps!

These ASA LW5's look pretty sweet if you have a white roof/mirrors. This example is 5-lug, but they come in 4x100.

Personally, I have a yellow with black and white roof and LOVED the daisy wheels.
However, I was going to post what I actually bought. Hell, I still will. I hate to be low keyed after everyone shows their high tech wheels, but the lines on these Borbets are super clean and, THEY WHERE SUPER CHEAP! Think I paid about $90 bucks for them last year. I was in the dealership this week and almost fell over at the $2000 price tag on a set of wheels. Sure, nice, but 2 bills?!?
I'm thinking of trashing the oem's I got and riding the Borbets all year.
Unless, of course, the Daisys become available.

Where can you get these adapters?
How will the adapters affect the handling of the car......is it safe??

Mille Miglia Ht3 - in 18" of course!
You can then fit 225/35/18 rubber with no issues
The offset is 35, and the whole package looks awesome, and really plants the car on the road nicely
