I have a 2013 Paceman S and it’s time to replace the all season tires. The tire I want only comes in 205 50 R17 instead of the recommended 205 55 17. What would be the difference if I used the 205 50 R17? Speedometer and mileage would be off?

Short answer is yes, the speedometer would be off and not in your favour. It will reflect the smaller circumference meaning that your odometer will count more kilometers than you're actually traversing, 3 % off in your case.
